So I planted wheat, oats, and clover the first week of September. After 2 weeks it looked like a golf course. Now half of it has about 3 foot tall weeds in it. Should I just mow it down, spray it, both, or just let it be?

Looks like johnsongrass maybe? Did you spray before planting? Johnsongrass also spreads by underground rhizomes and disking cuts them up and spreads them around. I can't think of much you can do at this point that won't hurt the plot but maybe someone else has an idea.

I agree with Mick, looks like Johnson grass. Couple options I could think of; bush hog, wipe with glyphosate (not spray), or spray with glyphosate and replant. Frost will kill the Johnson grass so if it hasn't choked your other plants out, you can just wait.
 
I sprayed it about 2 weeks before planting. I may just let it be and let the frost kill it off then.
 
I have lots more grass/weeds in my plot than normal this year..... i believe it's because of the heat.... i saw blackberry briers sprouting the other day..... they think its spring i believe.... this heat has gotta go for everything to be normal.....maybe we will get a frost soon.......
