Figured I would give it a try tonight with some of the fat trimmings off the leg I was butchering. On a scale of 1-10, the smell is about a 2. I wouldn't classify it as totally "neutral", but it's certainly not overpowering at all. I would expect the ability to use this as a baking fat with as mild as the flavor is��..but as lean as a deer can be, there's not a big yield at this point. I might have 3 oz. in the jar now.

I'm looking forward to cooking with it to see how well it incorporates, though.

BTW - I really like the cast iron in your pic & vids...ain't nothing like it!
 
That is really interesting. The wife cooks with coconut oil all the time. I like the benefits but hate the flavor.
