Just finished up the process of making a 25lb batch of venison bacon. I used the Bearded Butcher bacon kit. It turned out a little sweeter than I really like but it's good. Wife really likes it so that's a plus.

I did it last year, it was Ok; I didn't like it enough to do it again this year. Bearded Butchers on youtube have a great video on how to do it. I'd describe it more like venison spam that is alot meatier
I used 60/40 ground deer & pork butt.
To me it's more like glazed ham.
Bacon only comes from pig meat in my book. But I could see that as a "Spam" similarity.
