In my opinion it is always good to have a smorgasbord for the wildlife. Different plants will be more or less palatable at different times so it doesnt hurt to offer variety. My plan would be just like my own is(of course lol) Have some fields that are perennial( like clovers and chicory) and some that are turned under every year and planted with a variety of annuals. But thats just me.

Yep,.. variety is always better. Its also good to try for 50% perennial and 50% annual. That way ,. the perennials are still there while you establish the annuals. As far as late winter,... IMO all you need in TN is a good winter hardy oat and dwarf essex rape with either arrowleaf clover or crimson clover.
 
Natural field growth is always a good mix with planted food
plots. Deer like variety and fields left to grow up, is always
good. Not to mention the secure cover provided.
