Turkey legs after braising

I just made stock from one carcass and will make more from the legs and wings next. I take that leg meat and mix with BBQ sauce with a little liquid hickory smoke. then put it on buns and it makes good sandwiches. More work, but more flavor than the breast.

I'll hopefully be trying this soon. What kind of braising liquid do you use? How about your recipe for the mole sauce.
