Yep. Low fat and tasty too!

Ingredients:

1 1/2 tsp canola oil
1 1/4 cups shredded spinich (fresh is best)
2 garlic cloves, finely chopped (I use my garlic press)
1 lb. ground turkey (If you have some left over from roasting - you can chop it up real fine)
6 tbsp mashed potato (cold)
3/4 cup no-fat cottage cheese-strain off any liquid(you could use low fat, or even the real stuff I guess)
1 shallot-finely chopped
1 tbsp whole-grain mustard
2 tbsp basil, chopped (fresh-if dried use just one tbsp)
1/2 cup plain bread crumbs

Directions:

1) Preheat oven to 375 degrees
2) Heat oil in a nonstick skillet
3) Add spinich and garlic to skillet, cover and cook over low hear for around 2 minutes - until the spinach is wilted. Remove and let cool.
4) In a bowl mix all ingredients and 1/2 the bread crumbs, including the spinich/garlic
5) Put the other half of bread crumbs on a plate. Wet your hands and form the burgers.
6) Roll the burgers in the bread crumbs on the plate, then arrange them on a baking sheet sprayed with non-stick canola oil.
7) Bake burgers for around 20 minutes - until golden brown. Internal temperature for ground turkey should be 165 degrees.

Pretty good! BTW - wetting your hands prior to forming each burger really helps to keep the mixture from sticking to your fingers.
