You can get one...actually 2 off of any cow in west TN.

What is Tri ?

Its the top part of the flank steak, what people make fajitas out of. Or the bottom portion of a sirloin. It has very coarse/porous grains which makes it take on marinades really well. Its marbled like a Ribeye but as flavorful as a sirloin.

it isnt a loin cut, which means the muscle fibers will be more evident

It also is about like a brisket but doesn't take as long to cook. And just as tender.


And I know you can get it off of any cow. But not alot of butcher carry it in west tn

My friends up north cook the heck out of tri tips. They are delicious. He usually brings a few down from Ohio.
