What is the best method for handling trespassers?

I have a few folks on my place that like to ride ATVs and I have asked them to stop on the two rare occasions of seeing them in the act. However I get regular pics on my game cams.

I have found the trail they come in on and posted no trespass signs.
I do not know their names or addresses and short of holding them until sheriff arrives, how do I handle this legally? Since it isn't a hunting issue I assume I need to work with the sheriff but appreciate any input.

Without the hunting it is a sheriff's dept. issue. I would suggest having a camera handy to take their pictures and see if you can get a name and address from that.
