I am thinking about going squirrel hunting, but I don't want to kill any, unless I intend eating them. I used to squirrel hunt when I was a teen, but we always gave them away to someone who ate them.

We did camp one time and killed a few squirrels and tried to cook them over a fire like roasting a hotdog. Not good!

What is the right way, and are they really good to eat.
 
i boil them for 45-60 min then flour & fry.throw the ribs away & keep just the back portion & legs.also boil with a onion til tender then drain & add BBQ sauce .i killed a mess last sunday & had them for lunch :)
 
Here is how the cajun guys at camp do them.

Flour and brown squirrels on all sides in big cast iron dutch oven. Set aside.

Chop 2-3 large sweet onions and brown in oil until caramelized. They should be almost black.

Add Squirrels back to dutch oven and fill 2/3 full of water.
Season with Tony Cachere's creole seasoning to taste. Add a couple splashes of favorite hot sauce.

Bring to rolling boil and cook 2-3 hours until liquid has reduced to a thin-medium gravy.

Serve hot over rice.
 
If you notice, there is a commonality. You have to cook them for a good while. They are very tough and need to be cooked for at least an hour to an hour and a half.

Here is my favorite squirrel recipe. Quarter the squirrel and wrap each quarter in a slice of bacon. Throw on a charcoal grill and slow cook for about 45 minutes. Slather the squirrel in your favorite bbq sauce and cook another 10 minute. Take them off the grill and put in a baking dish covered. Cook in the oven at 350 degrees for another hour.
