All of my red IR flash cams are at least 10 ft high to reduce the chances of deer seeing the red flash.

All of my cams on public land are at least 10 ft high to reduce the chances of people seeing the cam.

All of my black flash cams on my lease are about 4 ft high.

30-36 inches, as that puts the heat/motion sensor right in the center of an adult deer's body. However, it also puts the camera right in the line-of-sight of deer, and is certainly easier to see by human eyes as well. But that height gets the truest triggers and the best images.
 
I'm 6'... I usually put mine just below waist high and always put a slight angle down on em. Not much but just a little. Bout what BSK mentioned, 3' or just a hair lower. It takes a little trial and error to get em perfect.
