Depends on the temperature. Low 40's or colder and it "should" be ok for a day or so. Much warmer than that and you run the risk of bacteria which in turn can make the hair slip.
For the best quality mount get the deer in a cooler out of the sun and get it caped out and in the freezer ASAP.
If your in a remote setting and can not get the hide into a freezer it should at the least be salted down thoroughly after being caped. Not much any taxidermist can do for a deer that has not been taken care of properly.
