Tonight we had some cajun smoked chicken thighs, veggie, and we experimented with some sweet potato chips.

Sliced wafer thin and deep fried up crispy is our favorite. Regular salt is good.
Tony Cachre's creole seasoning is even better.
Tried some Jamacian Jerk seasoning and it was ok. Too harsh when you first bite but mellows quickly and tastes good. Need to tweak the recipe a little.

But the big winner was the BBQ ! Sprinkled some of my Memphis Rib Rub on them when they were hot out of the fryer.

Mmmmmmmmm. GOOD!

Try them sometime for a different twist.
 
We have been expermenting with them different ways also.
A easy way to get them cut thin is to use a salad shooter.
I like to melt a little butter on them. Then salt,cinnamon,and brown sugar.Sweet and salty
 
We bake them instead of fry them. Been doing it for a while. Our kids love'em. We just sprinkle with sea salt. Sweetness from the potato is plenty. Had some sweet potato fries the other night with some chicken sliders (homemade mustard, pickled red onion).
 
We usually cut them a little thicker and oven bake them to keep the fat content down.

Wanted a crispy treat this go round.
