Summer Corn Salad

A summer favorite of my friends and family and is quick and easy to make

1 can of corn (drained)
1 diced bell pepper
1 diced vidalia onion
1 chunked cucumber

Mix all ingredients together
Stir in 1 1/2 TBSP of Mayo and 1 tsp of fresh cilantro
Salt and Pepper to taste

Chill for at least 4 hours (overnight is best) stirring occasionally.
 
That does sound good! And very easy. I made a corn salad the other day. It was:

2 cups frozen whole kernel corn but you could use fresh
3/4 cup cucumber, peeled, seeded and diced
1/2 cup diced red onion
3 tomatoes, chopped
6 scallions, chopped into 1/4-inch segments

Mix all those in a large bowl then in a seperate bowl mix:

3 tablespoons sour cream
Salt and pepper
1/4 cup red wine vinegar
1/2 cup salad oil
3 tablespoons chopped fresh cilantro

Toss it all together.

It's very refreshing.

I knew I was forgetting something... 1 whole diced tomato
