Stuffed Turkey Breast
Serves 4 to 6 people
1 medium onion, chopped fine
1/2 cup fresh mushrooms, chopped
2 cloves fresh garlic, minced
2 tbsp. butter
10 oz. fresh spinach, chopped
1 cup breadcrumbs
1 tbsp. Parmesan cheese
1 tbsp. Romano cheese
1 each whole egg, beaten
1 tsp. fresh thyme, chopped
1 tsp. fresh sage, chopped
1/2 tsp. black pepper
1/4 tsp. white pepper
1 tsp. salt
1/4 tsp. paprika
1 whole skinless/boneless turkey breast
Preheat oven to 350 F. Cut four pieces of butcher�s twine approximately 12 inches long.
Saute onion, mushroom and garlic in butter until softened. Set aside.
Blanch spinach, drain, and squeeze out most of the moisture. Combine spinach, breadcrumbs, cheeses, egg, thyme, black pepper, and saut�ed vegetables in bowl. Set aside.
With a sharp knife, butterfly turkey breast and spread open. Place plastic wrap on top of meat. Pound to tenderize and create a somewhat uniform thickness.
Spread the spinach mixture over turkey and tightly roll, keeping stuffing inside. Slip each piece of butcher�s twine under the roll, spaced evenly apart. Pull twine up and tie the roll together to ensure the roll stays together.
Combine salt, white pepper, sage, and paprika in a small bowl and use as a rub over the turkey roll.
Bake until turkey reaches 170 degrees, approximately 45 minutes. Remove from oven and allow to rest for 15 minutes before slicing.
The filling provides great flavor and moisture to the meat
