cut it up in skewer size and put in large bowl
add olive oil
salt pepper and cajun season to taste
mix well
place on skewers
grill

Make squash relish with it, It goes great on burgers ,hotdogs,with pinto beans almost anything.. , ..

The best way I have ever eated it is to slice it length wise, about 1/4 in or so thick. Then spread on some olive oil, put some Tony chacheres (sp) (creole seasoning, dry) on it and grill it.... I will grill it like this 4 to 5 times a week for my faimly and they love it. Zuchinni is also good this way.
 
Listen to this one, my sister does it all the time. It's great.

Cut ur squash into slices like always.
Got a bowl of BUTTERMILK
Dip your squash into it
Then into your cornmeal,black pepper and salt
Then get some EVOO and get your pot hot.

Get it ready to fry like always.... Then here's the kicker...

Add ZESTY Italian dressing into your olive oil. Get it pretty deep and get it hot, toss in your squash and deep fry them basically.. It's amazing.

I do not know all the details but it's easy to figure out.

A meal by it-self
One of the good things about the squash fritters. If possible cook more than you can eat.Don't make your patties too thick. Any extras get drained well on paper towels. Then put them in the freezer on a cookie sheet so they freeze quickly . Bag them up. When you get a urge for squash next winter. Put them in the oven around 375* for 15 or twenty minites and thier just as good as fresh from the skillet. It is important to drain well and freeze them quickly. If not they'll turn out sorta grezsey and mushy.Works with zuchinni also.
 
A little Jane's Krazy salt will give any recipe squash or other wise some good extra flavor. Krogers,EM James and a few other places have it. I put it on alot of stuff. Pop Corn,Fish,French Fries,ect.,ect.,,.
 
My boss has a great recipe for baking them, w/ peppers and bacon and something else. I will get it and post it. IT"S GREAT

I can relate. My buddy spends a week in Florida every year and this is the week. Sunday, I picked 14 or 15 squash and bout a wal marks bag of green beans. Went back Wed and picked 45, some huge!! and another 3/4 bag of beans. More coming. Dang squash everywhere. Slice em up with a vidalia onion in a casserole dish. Add a stick of butter,salt and ground black pepper to taste, then generously layer some garlic powder and 10 to 20 shakes of soy sauce. Bake @ 275 for an hour. Man Please!! Good eating
 
Grilled squash
Slice squash add salt and pepper, garlic powder, butter and worcestershire sauce to each slice on both sides.
Grill squash until tender with black marks on each side from the grill.
Add your favorite cheese as a final touch and let it melt.
 
Here is a baked recipe.

Cut end's off squash.
Slice down Middle
Scoop of squash.
Fry Bacon
Fry squash in bacon grease with green or red peppers(whatever you like) with salt pepper and onions.
After it gets tender throw in some cheese for a second.
Tear bacon up in it.
Put Squash and etc back in the Scooped out Half's and bake till cheese turns colors.

Enjoy.

Now that sounds like some good stuff!
 
The wife makes cake out of it somehow. It comes out like spice cake. I can get the recipe if you want it.

Zucchini Squash Bread
INGREDIENTS
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

DIRECTIONS
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Simple enough and I love it. The ol'lady said try Google, that is where she found it.
