I had some Red snapper filets in the freezer from a trip to the coast several months ago. I wanted to do something different with them so I sauteed an onion and 3 cloves of garlic in olive oil. Then added a can of stewed tomatoes and 3/4 tablespoon of red pepper flake and a cup of white wine and let is simmer for about 30 mins.

I grilled(on a stove top cast iron grill pan) the salted and peppered filets to about 1/2 done then transferred them to the tomato base sauce. Served it over rice. It was good, but a little too spicy. Might go with 1/2 tbsp of the pepper flakes next time.

What does that mean? :D

Looks great. We are desperate to find new ways to cook fish. This looks like a winner. We just have a hard time finding a good fish that's not north of $15/lb.
