Speckled trout for days! (Video Link Added)

Last week I called my buddy in Houma to see if he had room for me in the boat anytime soon. Drove down Friday night and met him at his camp in Cocodrie. Fished for specks Saturdau and Sunday mornings. Went to the marsh for some redfish for about 45 minutes Saturday evening. Needless to say, it got nasty! 89 specks, 4 reds and a sheepshead on Saturday, 32 specks on Sunday, and an awesome time with some great Cajun people!

brought home 16 bags of filets and 30 lbs of shrimp. Will be eating good for a while! At least until I go back next month....

All it takes is going! First time I went down there I pulled my 16' Jon boat with a go devil and tore the marsh up!!

Yes sir!! That's some mighty fine table fare. If you don't mind the flavor of it, I'd recommend getting some coconut oil. Take those speck fillets and dust them in Old Bay, pan fry them in coconut oil. It's an awesome combination as long as you don't mind the flavor of the coconut oil. Congrats on the haul!

I'll have to give it a try Jimmy. I've had trout fried, grilled, broiled and blackened and all have been awesome, so I'm sure this will be great as well!

So I know this is a stupid question but.... do the speckled trout taste like a rainbow?
I assume the same family?

Not even close. The meat is completely different texture and flavor. Specks have white flaky meat. In almost any case saltwater fish > freshwater fish in taste and most would agree. Even the better tasting freshwater fish like walleye, crappie (not my thing, too mushy), and smallmouth and spotted bass (I know people get a little butthurt over that but I don't care, I like them both) don't compare to even a mediocre saltwater fish. But speckled trout are near the top in terms of taste. I do like the taste of bigger, deeper water fish like swordfish, grouper, tuna, etc. but honestly I could eat redfish and specks and never miss any other species of fish, fresh or salt water.

Jimmy is right. Speckled trout are actually part of the drum family I believe. Could be wrong though

It's really hard to screw up speck fillets. A couple Summers ago my wife and I took a vacation to the Little Lagoon in Gulf Shores and of course my kayak and fishing gear came along. We rented a house right on the lagoon so I'd get up at like 4am and go fishing and come back right about when she was waking up haha. I caught some good specks, one went 26 inches which is my personal best. We ate a few lunches off of them and I cooked them that way. My wife still says that was the best tasting seafood meal she's ever had.

Did somebody say road trip? Say when. I'll be going to Port St. Joe in august to chase tarpon and fish for triple tail,trout and redfish as well.

I'm not sure to be honest. We just went to his camp which is about half a mile from the marina at the end of the road.

Awesome video Jared. Those specks are fun once you find a school of them, you can catch about 1000 if you wanted to and they deliver some ferocious topwater strikes if they're in the mood for it. I've always wanted to fish down in da bayou, it's on my bucket list.
