Usually do babybacks. Spare ribs on sale so thought I'd give em a try. Been a long time. Normally do 3-2-1 on the babybacks. Little longer on the spares? Love me some ribs

I prefer spare ribs over baby backs, always used the 3-2-1 without any issues.

Need to do babybacks 2-2-30/1. Spares 3-2-1 all day
Texas style - did some the other day and they were great. 250 straight through, black pepper heavy.

You get a lot more meat with spare ribs and they're usually much cheaper. You can cut the baby backs off of the spares and have them separately and then pick the meat off of the bones and have pulled rib meat as a bonus when the cook is done. Make stock with the bones and fat and other residue and use it for gumbo or rice.
