Man, that stuff is great! We've used one twice in the past week just to eat, but it turned into a great substitute for pasta. My 2-year old is at the stage where he won't eat anything that's not meat or cheese, so it's funny to watch him gobble this stuff up.
 
does it really make a good pasta substitute? I would be afraid to use it for that purpose but I do want to try it sometime. How does it compare to pasta in taste and texture?
 
There is no comparison to taste or texture. The squash is pretty bland, so it won't take away anything really from the flavor of what you're already used to. But a properly cooked squash will have a little bit of a crunch to it (sort of like a water chestnut). It doesn't detract at all from the dish, though.
 
I didn't like it with pasta sauce, but I may not have cooked it right.

If anybody has any suggestions, I'd be willing to try it again.

Otherwise, butter and salt is good enough for me to eat it as a meal!!!
 
I didn't sit down expecting it to be a pasta "substitute". But I didn't dump a jar of Ragu on it, either. We like to sautee a bunch of veggies in a pan with some browned Italian sausage. We use Classico red sauce, mix it with the veggies and chopped spinach, and reduce it down until it's good and thick. Then we fork out the squash strands and mix it with the sauce. It's good like that.
