Like Poser said Kenbob, if you have a pressure canner you can can anything. The primary reason I can mine without meat is that you have to pressure can meat for 90 minutes. With veggies only the time is cut down to roughly half that.

When pressure canning something with a variety of ingredients, such as soup, you have to run the canner for the amount of time required by the one ingredient requiring the longest pressure time. i.e. meat would require 90 minutes. If only veggies you run the canner for the longest time required by the veggies you have used.

Example times for quarts:

Lima Beans 50 minutes
Carrots 30 minutes
Corn 85 minutes
Okra 40 minutes
green peas 40 minutes
potato 40 minutes

If you used this mixture you would need to can for 85 minutes which is required by the corn. Leave out the corn and lima beans and you go for 40 minutes. Make sense?
 
Yea, thanks guys. I didn't realise it was that involved. I was never much on watching growing up as I was getting out of it. I will just bag it for the freezer and hope for the best. Thanks.
