You waterfowlers please remember that I'm familiar with many of TN's native birds. I know next to nothing about the ducks.

I need to study a book for a few days because they usually pass by at a high rate of speed, much like the hawks that I struggle to identify.
Don't take long in the blind and you will be amazed at how quick you will be able to identify them.

Marinating in Baja chipolte or kerosene? One as good as the other...

Soak em in sugar water for a couple days, then marinate in steak sauce or steak marinade over night. Cube em, add a slice of pineapple, a little cream cheese, and wrap in bacon and broil or grill. Works for any waterfowl. The pigeon you can omit the pineapple and cream cheese on. It tastes just like dove.

Snowgeese were very good.
Marinated and grilled.
Wrapped some in bacon and they weren't as good. Cooked them too long I think.
Pigeon needed to be de-boned and then cooked.
Too big to cook like dove.
Tough outside and raw in the middle.

I've always wanted to hunt both, but never thought it would be an option to do together, lol.

I've heard pigeon is pretty good eating when you can get them outside of the influence of a city (since they eat so much nasty stuff). We have them all over in the industrial area of south Memphis, and they are always getting into places they shouldn't and killing themselves.

One of these days I'll go find a snow geese shoot to join in on - it sounds like a neat experience. I've never killed a goose of any kind, but I like the idea of trying to smoke a whole bird skin on and see how that turns out.
