Some of the Snapper we caught last month.

Pan Seared in Ghee and just a tiny bit of Canola Oil...finished with a pat of butter.

Just a dusting of red pepper, a good bit of Smoked paprika, Garlic Powder, Onion powder and Ground Jalapeno pepper.

Fish and Grits is a Southern Delicacy...the only thing that might be better is Shrimp and Grits...but that is debatable....and they have to be fresh White Shrimp to even start the debate.

I made the Grits with about a 3/4 cup of buttermilk...and yea that is bacon crumbled into the grits....because Bacon.
 
Because Bacon yes. I put smoked Gouda in when I make grits. The fish looks great, I love fish seared in a very hot pan with Cajun seasoning.

I just opened the cooking forum to post the pan seared snapper I made fish tacos out of last night.

My gosh it was AWESOME!! Will be doing it again this weekend.
