Ground up 25 pounds and stuffed them this evening. Not sure how many I can fit on the smoker but I'm sure I'll have to make a couple rounds.

Man o Man that looks good! We get the Amish, Mennonite's whatever they are to do our deer processing up north and they make my snack sticks with pepper jack and jalapeño. Good stuff!

Looks awesome! I know the work involved in making these all too well. View attachment 283192View attachment 283191
Those looks great! I understand why they charge what they do for these things. My favorite so far has been Polish sausage. I thought I had the seasoning but only had the casings. My intent was making a batch of both but not gonna happen.

Have you made summer sausage yet? It's my favorite of all the stuff we make View attachment 283206
I've made a bunch. Here's some brats, polish sausage, and summer sausage I've done. Always turns out great but I've learned to let the summer sausage sit a day before eating. It needs a day to settle down.

Man those brats look great.
It all looks great. I've made a lot of jerky/SS/hotlinks/snack sticks/brats/smoked sausage/Italian. Matter of fact I'm out of everything right now except for 2packs of jerky. I like the 19mm snack sticks(little harder to stuff due to size). PS has good stuff. It is some work, but it's a good reward. SS is probably the easiest.
