8lbs ground turkey (white and dark meat), 3lbs ground Boston butt, 12 Jalapeños, and 1lb sharp cheddar cheese.

Halway done on the smoker now.

Done and sealed! I think these are the best I've ever made. Not very spicy, but the extra sharp cheddar gives a nice bite.

Wrangler, I use LEM Backwoods spice mix and cut the recommended amount down to 40%. The Jalapeños were from my garden

Oh, don't waste your money with the $11 per pound high temp cheese. You can use the cheap $4 per lb regular cheese as long as you don't overcook in the smoker. 162 to 163d, and it's good to roll.

But dang casings have gotten insane... around $1 per lb just for the casings. I have got to find a cheaper alternative.

$ .70 per lb for butt
$ .25 per lb for spices
$ 1000 per lb for the wild turkey.
