Maybe poser or someone could chime in. Never cooked beaver. Have a tail in the freezer from past winter. Yesterday evening I shot a 47 lb beaver and want to try smoking the hind quarters. Is it worth trying?

I would imagine so, based on the amount of fat they have. Poser claimed the beaver he cooked was some of the best wild game he's ever had. I'd say brine it for a bit and try it. Have you butchered it yet?

I have the hind legs in brine now. Chucked the tail because it was mostly fat and very little meat. Will see how the legs turn out in a few days.
