What are some of your go to smokes? I will say a Boston Butt. I want to do a Prime Rib.
 
st louis cut ribs, boston butt(deboned), prime rib(butt since im so cheap i usually just get the whole ribeye), wild turkey breast, 8lb chickens.

a whole prime rib is good, or in my case whole ribeye. the guy at the bbq place told me how to do it. smoke on heavy smoke for 4 hrs then slow roast covered in oven to finish. the beauty of it is take the temp from the center and at medium rare to medium the outside slices will be medium well to well for the people that dont like pink meat. it was a big hit at our Christmas dinner a couple of years ago.
 
Pork loin, rub down with pork rub of your choice, smoke 5 hrs @200 with cherry wood, finish off in oven, wrap in foil (seal itl @ about 180 for 2 hrs while you cook the rest of your meal. Slice thin. You will hurt yourself.
 
Butts or picnics for pulled pork, followed by turkeys ( I keep 3 or 4 in the freezer), and I do about 4 briskets a year. Will do baby backs when we have guests or a 7 blade roast when i want pulled beef and not wanting to do a whole brisket.
 
I haven't done a brisket (hears it is hard to get right) but I want to do a prime rib.... My go to is butts and st Louis ribs.
 
My favorite to do is bone in rib roast, aka "prime rib". After that beef brisket and pork loin (not tenderloin) are favorites. That said, I cook more pork shoulders/butts than anything, probably 100 per year.
