small batches -water smoker,$25-$30 bucks,ease of operation decent product.propane smoker-easy to set proper temp-2 sizes,4 shelfs with a place for 1-2 more,30lbs leg 1/4s on the larger with not much problem,.wood/charcoal with offset firbox-a challenge to master,gives the best flavor "maybe" :) i have 1 of each, the propane & gas fired will run about $130 & up,the propane gets pretty good milage on a tank,hickory chunks last 1-2 hrs for each hopper full.id start with the water smoker as its almost a set it & for get it deal,normaly 1 water refill for pan & some more hickory chunks at that time,8-9hrs total time ya got good eats,mike243
 
my brother turned one of those old fridges into a smoker but from what I have read if you want to do pork butt or other meats like that you need something that holds the heat a little better.
 
i do all kinds of meats & the only part about the heat is being able to control it,i have cooked whole turkeys & pork butts on every smoker i listed,the temp range should be anywhere for 200-250 with 225 being just rite,its fairley easy to maintain that with all of the smokers,a little more time needs to be added on cold days if you cant get your smoker up to speed,colder days means more fuel ,the old all steel inside fridges do make good smokers up to a point,hard to wash out without soaking the insulation & causing mold mildew problems,mike243

It doesn't come with a temperature gauge, though. I paid $7 or so for mine at Wally World.

Mine came with the factory temp gauge. I had to install it on the lid. I bought several thermometers for checking the internal temp of meat.
