This one turns out pretty good :
2 packs Zatarain's shrimp and crawfish boil spice mix
about 1/3 bottle of Zatarain's crawfish and shrimp Oil
3/4 cup salt
3-4 lbs red potatoes
7-8 ears corn, cut into 1/3's
3 lb smoked or kielbasa sausage
2-3 lb shrimp
2-3 lb crawfish (or double the shrimp)
4 lemons cut in half
1 - 1 1/2 lbs mushrooms
2 large Vidalia onions

Bring the spices/seasonings to a boil in about a 30 qt pot 2/3 full of water.
Next add the red potatoes and cook for 6-8 minutes. Now add the corn and cook for about 5 more minutes.Squeeze the lemons into the pot and add the lemon halves. Next add the sausage, onions and mushrooms and cook for 5 minutes. Add the shrimp and/or crawfish and boil until done ( usually 3 or 4 more minutes).

Cover a picnic table with brown paper, have a big bowl of remoulade sauce , cooler of cold beer and enjoy !!! I also sprinkle everything with a little Old Bay after I dump it out on the paper.

I've never followed a recipe...but typically use about 2X what the seafood boil spice-bags call for...and also add the oil. Toss in whatever else floats your boat. Add your seafood for the last 3-5 mins of the boil, then let everything soak for 10 mins or so. The longer it soaks, the spicier it will be, just taste a potato every few min's until it gets where you want it. The seafood will always be less spicy than the potatoes.
