When do the deer usually start shedding in middle TN?

Depends on how healthy and unstressed the local deer are. The heaviest breeders will drop antlers first, due to accumulated rut stress. In a terrible year like last year, every buck on my place had dropped by January 12. In most years, especially following a good acorn crop, bucks generally hold until late February, with most bucks not dropping until mid-March. In fact, after a good year, it's not uncommon for turkey hunters to still be seeing bucks with antlers at the start of turkey season.
 
As with most years you'll have some dropping early and some holding till April. I was seeing some that had dropped one side in late December . I've noticed it becoming a pattern with some bucks as to when they turn loose.

I start looking every year in February, I rarely find any, but I need the exercise. Where I am at, north of Jackson, several were still hanging on to them into the beginning of March last year. Some are dropping now and will trickle into early spring. Most tend to drop here late Feb to late March. Already got the girl (my shed dog) out looking this past weekend. Have a few new farms to shed hunt on this season. Can't wait to see how many we find. Last year was our personal best in the 70s. Hoping to break the 80 mark this time.
