I started working on this about 2 1/2 years ago. I started the persimmons from seed a little over 2 1/2 years ago with the intent of just planting them as they are. Then I read an article at QDMA WORKS about grafting persimmons to change the sex to female. I marked some persimmons trees that had fruit last summer and collected scion work from them during January. I grafted these two about three week ago.

On the qdma website I just seen that a guy was grafting larger trees. If memory serves me right, it wasn't easy. Very interesting stuff though.
 
Found a decent pictoral of bark grafting. Its the same bark grafting as is done on a very wide variety of trees.So any video or pictoral of any kind of bark grafting to any speciecs will help you. Alot of your ornamental cherries are created this way. Some of them this is the only way they are created. After you insert several female scions like is shown in the pictoral, wait for them to take and get somewhat established then select the most vigorous one and take the others out. Then be sure to prune anything off below the graft. Ive probably done 50 of these for a Plant Propagation Class and a Landscape Horticulture class. Not all scions will take but thats why you put several in, to increase your chances. Your looking to match xylem(water carrying tissue) to xylem and phloem(nutrient carrying tissue) to phloem.
