Saving the Best for Last - PARSNIPS!

I don't have a clue why, but not many folks eat parsnips and even less grow them. My wife and I can't get enough of'em. They taste a little like sweet peanuts, if you can imagine that flavor.

I just dug these up last week. The cold results in the starch in the roots being converted into sugars which give the parsnip its sweet taste. If you haven't tried them, pick up some at the grocery and give them a shot. Delicious!

Lots of ways. If you want them as a side dish (not incorporated in something like a soup), scrape (peel) like a carrot. If they are really big, cut the hard inner core out by just chopping the sides off.

Boil for a few minutes - don't let them get too mushy like mashed potatoes - keep them firm. Then drain and saute in olive oil until lightly browned. It sounds like a bit of a chore, but it's not, and it's worth a little effort.

Any of the big seed companies should sell them. The seeds are tiny. Johnny's, Osborne, Burpee, Gurney, Harris, etc.
