I tried a new recipe this evening and it was so good I thought I'd share.

1. Slathered legs and thighs with Cholula and covered them with generous amount of fajita seasoning. I would prefer to put them back in a gallon bag and let marinate for at least 4 hours but didn't have time.

2. Chopped 1 onion and 1 bell pepper. Added legs/thighs (I separate them when I clean the bird), onion, bell pepper, and 2 cups chicken stock to instant pot.

3. Set instant pot to cook on high pressure for 35 mins.

4. Made homemade pico de gallo via ArnieTex recipe on YouTube. Sat pico in fridge to chill while turkey finished cooking.

5. When 35 minute timer was up, I let the pressure naturally come down for 15 mins then manually released. I shredded/chopped the meat and added back to the pot using the keep warm option.

6. Warmed tortillas, added meat, Monterrey Jack cheese, and pico for what was an absolutely awesome taco!

It takes a little effort but it's worth it, especially considering how much I enjoy hunting turkeys.

Whatever you do, don't waste the legs and thighs!!!

Were they tough? Haven't found a way that they weren't.
No, not tough at all. They temped at around 210 when I went to shred them. You have to pick through the tendons and tissue but the meat itself was plenty tender. It wasn't fall apart tender but far from tough.

I tossed some legs/thighs in the crock pot for ~8 hrs with chicken broth and then shredded to make turkey noodle soup. Good stuff.

you are doing it wrong!!!!

I've never used an instapot, but regular ole crockpot. for 8-10 hours, super tender. every time.

Crockpot for dark meat BBQ, MS pot roast from legs/ thighs, Carnitas (similar to what JBird did)

Debone and grind with a little bacon- excellent burgers

My new favorite- debone and grind with boston butt and make Keilbasa sausages and snack sticks.
