I'm planning my garden and one of the finished products I want from it is a really great salsa with all of the ingredients grown by me.

Anyone have some they would like to share? I promise if I go with your recipe, I will send you a quart of it.
 
There was another thread with a good looking salsa not too long ago...but here's mine:

8-10 fresh jalapenos
8-10 fresh yellow peppers
1/2 medium to large yellow onion
3 cups diced tomatoes
3-4 large cloves of garlic or garlic powder
Spices: salt, pepper, resemary, savory, thyme
2 TBSP oil
2 TBSP vinegar

Place a few peppers into blender or food processor at a time (4-6 depending on size). Chop very fine. Put into large plastic or glass bowl. Chop onion & tomatoes in processor & add to bowl. Add chopped garlic or sprinkle garlic powder over salsa until top is almost white. Add 2 pinches of each spice. Add vinegar & oil. Mix well. Cover bowl & refrigerate for a couple of hours to "ferment".
 
As with most recipes, we don't follow exactly if something sounds better. We used extra cilantro (as much as a bunch), double or triple the garlic, and add cummin.

> 24 cups tomatoes cut finely (peeled if desired)
> 6 big onions (10 1/2 cups: finely cut)
> 6 jalepenos (seeded, cut finely)
> 5 large bell peppers (seeded, 4 cups, cut finely)
> 1 3/4 pods garlic (cut finely)
> 15 cerrano peppers (cut finely)
> 3 stems of cilantro (cut finely)
> 4 2/3 tsp salt
> 1 oz black pepper
> 1 cup vinegar

Stir together in large pan chopped ingredients, bring to boil and use potato masher to mash tomato pieces to semi-puree state. Simmer until consistency desired (about 5-6 hours).

Hot water bath to can-I know you know how to do that! :)
 
Try this one......

Mark�s Salsa

1- In a Food Processor or Blender, add 3-5 Jalape�o Peppers, one Serrano Pepper and � Habanera Pepper. Cut the stem off, split into ��s. Adjust the amount of peppers to taste. I like it HOT!!! You might wanna leave out the Habanera��

2- Add a 4-5 Cloves of Garlic.

3- Add 1 to cup of chopped Fresh Cilantro.

4- Add 3 to 5 tablespoons of Lemon Juice.

5- Add 1 tablespoons of Worcestershire Sauce.

6- Add one teaspoon of Salt.

7- Add one teaspoon of Black Pepper.

8- Add one tablespoon Ground Chili Pepper and blend well .

9- Empty two, 16oz. cans of Diced Tomato's into a food processor.

10- Add 1 diced Onion a 32oz can o Tomato Juice and lightly blend just enough to blend .
