When I spent time in Italy, we were served some sort of roasted (or braised?) rabbit that was incredible. I recently asked one of the guys we visited to see if he might have a guess about the recipe. CONIGLIO (Rabbit) ALLA CACCIATORA is what he came back with. There's a ton of recipes online in Italian, but I would imagine any critter cacciatore recipe would substitute rabbit just fine.

My dad always put them in a crock pot for about 2 hours to let them tenderize a bit, typically in salt water or stock (if available).

Afterwards: flour, salt, pepper, and fry in a skillet.

This method works good for squirrels, too.
