It depends on how much smoke flavoring you like and what type of wood you use. I prefer a light post oak smoke (although most oaks are great, too) for a 3 hours or so and then let it dry. I don't use an electric smoker because of the moisture.
 
Just pulled one batch off and added another. I really need to fabricate some hanging rods to speed the process up, but this will work for now.

I started with red oak but switched back to small whole cuts of post oak-the aroma is MUCH better in comparison. 3 hours at 155 and headed to dehydrator for another 3 or so.
