I'm not sure why BBQ pulled pork omelets are not selling for $25 each at every restaurant in the Nation that opens before noon. Even in Memphis where Q is supposed to be King they aren't sold. Wow...goodnight.
 
Judge Beans in Brentwood, does tamales, burritos, tacos, and Quesadillas. Its TX BBQ so you may have to go with brisket in some cases.

Tried some at Scott's BBQ in Lexington a week or two ago. BBQ on top of gas station chips/cheese sauce.

I first had one at a now-closed place downtown called Cockadoo's. Ever since then, we've been making them at home. Whenever I bring home que from the Cozy Corner, I always get an extra pound of shoulder just for omelets.

FYI, in case you haven't yet been, Elwood's Shack has an excellent number of brunch items on the weekend. I can't recall if they do an omelet or not, but their BBQ Benedict is superb.
