I've been smoking some boston butt recently and frankly, it's been turning out downright delicious, if I do say so myself!
I soak the butt in water/molasses/salt brine for 10-12 hours, then dry rub it & cook it on the weber charcoal grill for 30mins/pound, adding moist hickory or mesquite wood chips as needed.

I was thinking about doing the same with deer meat this year. Has anyone tried it? How did it turn out?
 
Poser's buddy did one recently that they say turned out phenomenal. I believe it needed a LOT of help in the fat department, so they used lard.
 
Some people use real fatty bacon to wrap the quarter in... I have a buddy that kills hogs in the winter. I have him save me around 25lbs of fat( I don't use it all for the one quarter). I slice 1.5 inches thick, lay over quarter, secure with toothpicks and a few hours later.......full belly.
 
I smoked a deer ham when I was smoking a couple pork butts. I placed some of the fat I trimmed off the butts on the venison. I placed the ham on the rack under the pork butts to catch the drippings off the butts. Turned out great and pulled apart like the butts did.
 
^^^That's not a bad idea at all. Kinda difficult when using a Weber kettle grill though. :)

Perhaps I'll trim some of the fat off my next pork butt & freeze it for the next deer ham...

I have done that too.
