Pruning Pear Trees

To help improve the deer and turkey habitat on our property we planted an orchard of trees that includes: pear, sawtooth oak, and Chinese chestnut. We have never pruned any of the trees and are wanting to learn how to do so. Especially with the pears. Anyone have any advice on pruning pear trees?
 
Football Hunter, I have thought the same about oaks but in watching videos on You Tube about tree pruning lately found this one recommending pruning oaks.

I know I have a bunch of oaks that have almost burst the tubes and probably need pruning bad as they are now 3 years old. I've trimmed my fruit trees with geat results so I'm going to take a stab at the oaks soon. What do you think?
