Went there not long after they opened. Sausages are great, but just didn't want to pay the beef prices. I use to have a butcher shop close by and it was hands down the best beef around, but when you see the word "prime", get ready to pay dearly. The cool thing about PRB is the unique cuts you can get. I'd rather buy pork belly from there, than the Asian store on the other side of town. The Bloomy Rind cheese shop is located inside as well, though I'm not a fan of "rind" type cheese.

I saw a article on that shop in Garden & Gun. There is not a equivalent butcher shop to that in Memphis that I know of. I have been to a couple of local butcher shops, but nothing I have been impressed with and definitely not butcher-selected animals.

That being said, the popularity of butcher shops is on a sharp rise. You are definitely going to pay more in a shop like this one, but the quality tends to be unparalleled.

There's a place in Collierville that's relatively new. I haven't had a chance to do much business with them, but they have a pretty nice selection. I think it's called Thomas Meats.
 
I have been to the one in Collierville and bought a steak. It was an expensive steak but one of the best I have cooked in a long time. They say they have a better selection on Friday and Saturday for their seafood and meats. You will have to get them to cut a ribeye for you if you want a thick one as they try and provide small portion sizes for the normal (not fat like me) people. The people there were very friendly and gave me a great walk through of what they are trying to do.
