About the only open ground we have is a pond levee and the down slope on the back of the levee. I read a QDMA post that now (when it dries out a bit) is a good time to burn such areas. Would it be reasonable to burn this area and plant something the deer would eat year round? If so, what would you plant?
 
Another aspect of which crop you might want consider is erosion control. Finding something that's going to be be heavily grazed but remains fairly dense and will stay that way year-round might be a real challenge. The last thing you want to is your levee/pond to start eroding and I can't really think of a 365 day a year crop that you could rely on for sloped ground.
