what is the best way to cook these?
i never liked it, but heard it will fight off the swine flu :D j/k, nah but seriously heard it has good health benifits.
with all the rain were havin, looks like right now is a good time to pluck em.
 
the beat way i have eaten it was fried,never cooked it myself,it was washed & then dipped in a egg wash & coated with a cornmeal/flour mix like you would fish,been years since i have thought about it,might be time to have some more :) ,mike243
 
This is how my granny taught me to cook it. I always boil it for awhile, helps to tenderize it some. Then I fry it in a skillet with some olive oil. Right before I am ready to take it up, I move it to the sides of the skillet and scramble a couple of eggs in the middle. Mix the cooked eggs and greens together, salt and pepper it good. I usually will slap it between a couple of pieces of white bread and make a poke salad sammich. It is always best to only pick the small and tender leaves, the larger ones seem to be tougher and bitter. Man I am hungry for some greens now! :)
 
Yep, boil it for a while to tenderize it then pour off the water and add some corn meal and egg to make patties like fritters full of poke and fry them. Some garlic powder or cajun seasoning is good too.
 
pick the tender leaves, boil it twice to get the poison out and to tender it, cook it in a skillet with eggs. corn bread and pinto beans and ham hocks.

i remember when i was a kid i ate almost a whole skillet and tore my stomach up, my mamaw said "you shouldnt eat such a big a bait in one sitting." wished she wouldve told me before hand. lol.

I like it with pork/bacon or ham base and a couple of eggs mixed in.

I've never tried the chutes. I always figured I'd end up on the commode, but if it's safe I wanna try it.
 
made some lastnite ya'll... w/ the eggs and some cornmeal....mmmmm good! thanks a bunch... some of that w/ some cornbread and garden onions! WOW
 
The bigger the leaves and stalk, the more poison they contain.
It is best to wash well, cook in water until they wilt, drain that water and add more to cook them further.
Then toss some in a hot skillet, scrabble a couple eggs on the side and mix it all together with salt and pepper.
