Some nights I just don't feel like cooking. So, on the nights I do, I overdo it for the sake of the future.

Two chickens, halved. Soaked in an apple cider and molasses brine overnight, rubbed down, and grilled/smoked over pecan and applewood chunks. Then cooled, vacuum sealed, and into the freezer. Makes a rough day at work easier knowing these await me on any random night.

Very nice! I've only recently started halving mine for smoking and am really enjoying them. I don't think I've spatchcocked one since.

I'll have to experiment with the brine you mentioned.
Trapper John, the brine sounds good. Can you share the recipe?

It's good stuff. Just a basic brine with apple cider as the liquid and maybe a 1/4 or 1/3 cup of molasses mixed in. A crushed garlic clove or two and a few peppercorns and some orange zest tossed in help too.
