Pineapple Fajita Chicken

Tried making a new recipe. We had Chicken fajitas and pineapple in a restaurant that has become our favorite. So, I rubbed a chicken in fajita seasoning and stuffed it with pineapple. Then it went on the rotisserie. Unfortunately, the chicken didn't pick up much of the pineapple flavor. But I cut up the pineapple after it cooked and there was plenty of flavor adding a piece to a chicken bite. Overall, it was tasty as usual.

Pineapple is a natural tenderizer, inject pineapple juice for chicken or marinate steaks in it.

When I do this I soak the chicken in the pineapple juice for a little while. I usually add some teriyaki with it as they go along well together.

I always have a few young turkey hens processed whole for just this.
I brine overnight in orange juice, inject pineapple juice, rest for 4 hours then in the smoker with orange wood!
Mmmm that's some good stuff right there!
Not as citrusy as you would think but the effect is worthy.

We do pineapple chicken with Italian vinaigrette on the grill (in a grillin skillet) with onions and peppers and the pineapple chunks too! We really enjoy pineapple.
