Maybe this is old news but new to me. The wife occasionally makes a pie with a crust made of crumbled graham crackers and butter. Then refrigerate. Upon removal it slices easy but the crust usually falls apart while trying to remove a piece from the pie plate. Run about 1/2 inch of hot water in the sink and place the pie platter in there for 15 seconds. The slice comes out perfect. That initial 1 treatment has worked on successive slices after removing the pie from the fridge as well.

How dat work? I mean, what does a little warm water on the other side of the pie pan do to the crust? And Why? The butter melts and the butter re-sets? Nah, has to be something else?
