I went down to Gulf Shores last week for my daughters spring break. There is a Cajun Market in Loxley which I stopped in to check out. They had tasso ham which I bought every package they had. The lady behind the counter talked me into buying some pickled pork saying that it was great in beans. I tried to look up some recipes on line and all I could find was where people cook it like corned beef, boiling it in water and then adding vegetables. Does anyone have any good recipes for it?
I highly recomend stopping in at that place on your way into Gulf Shores. Its called Lil G's Cajun Market. Its in a little green building on the right as you are going towards Gulf Shores on hwy 59. In addition to tasso ham and pickled pork, they have a large selection of home made sausages, boudin balls, as well as whole deboned chickens stuffed with various stuffings including shrimp and crawfish just to name a few things they have. I could not resist so I bought several stuffed with shrimp and several stuffed with crawfish to give to people up here when I got back.
Thinking about blackening some sheepshead fillets and making some kind of tasso cream sauce to pour over it.
