New meat grinder

Just bought my first one, about to thaw some freezer venison and attempt sausage... what are the rookie mistakes I need to avoid?
 
grind it while its still very firm,water needs to be added with some grinders,make sure every thing is tight,silver skin is the devil :) i have a grinder only & 1 for my kitchenaid mixer,cant tell that the plain electric grinder does better than my kitchen aid.a jerky shooter is needed asap along with some jerky mixes

lol i didnt know our kitchen aid mixer had a grinder attachment until after i bought a new grinder.
 
I make breakfast sausage with Old Plantation seasoning mix and don't ad fat. For summer sausage and such, the trick is to cook it in the smoker.
 
Yeah, keeping it partially frozen my wife's kitchen aid mixer with the grinder attachment does great.

Now, sausage stuffing.. the kitchen aid attachment is crap.
