this is how I have done them
cut jalapenos in half length wise and remove seeds, then cut into 1/2 inch slices.
cut deer backstrap into bite size pieces (fawn backstrap is the best but not necessary)
cut raw bacon strips in half
place piece of deer meat and piece of jalapeno on bacon, add a teaspoon or so of cold cream cheese. Wrap up tightly and run a soaked tooth pick thru popper. Make as many as you want and throw on the grill, turning a few times. be prepared for some flames and smoke when excess cream cheese melts out and burns. there will be plenty of cheese left inside the popper and they are delicious. Grill until bacon is plenty crisp and deer meat is medium to rare (depending on how you like it). Last batch I made was Thanskgiving and some of the deer meat was very rare (I pulled off the grill too soon) but it still was delicious.
