i debone my sections, put them in a plain white garbage bags. layer them with 3 inches of ice in between in ice chests. leave the plug out, and place more ice on top in each chest as needed. 4 days later you got some pretty tender meat. i dont age young deer, just cool them down 1 day and cut.
I skin, debone and place in a CLEAN cooler. Pack completely with ice and allow to melt for 24 hrs.
Pull drain and repack with ice.
Keep cooler packed with ice for 3-4 days with drain open just enough to allow melted water to drain off.
