Pretty good appetizer for parties, etc.
Ingredients
6 cloves garlic
2 sprigs rosemary
1 orange - sliced and peel on
1 quart large olives (unpitted/pitted - don't get with pimento)
2 cups extra-virgin olive oil (I like Colavita)
1 tbsp smoked paprika
1 teasp red chili flakes
Couple of grinds of freshly ground black pepper
Combine everything except olives in a pot over low heat.
Warm slowly which softens up the garlic cloves and gets the oil all infused with the flavas!
About 5-10 minutes in - add the olives, let heat around 2 more minutes...then remove from heat.
Leave the olives to cool down (steep) - serve at room temp.
Enjoy.
