Not too familiar with a lot of marinades myself. I need to look into them more if I am to harvest the amount of wild game that I want this year.

I don't. I dry the meat in the fridge on a rack. Then tightly wrap it with a paste made from cracked peppercorns and kosher salt. Wrap tightly with Seran wrap and let it sit.

Salting the meat for over an hour works better than any marinade. The salt draws the moisture out of the meat, then dissolves into that surface moisture. The now dry meat reabsorbs its own, now salted, juices and fully incorporates into the meat. Marinades only penetrate 25% or so past the surface, without help from injections or slicing.
 
Zesty itialian dressing and jalapenos cover and let set in fridge overnight then cook to ur liking. Nice change from time to time
